Hands up who doesn't like fish fingers. I love them. I used to love having them with the children when they were small. I have just matured a little and now make them myself. So simple and so tasty. With apologies to Captain Birds Eye although you will always have a place in my heart, I think these may be just a tad better.
Fish Fingers
Firm white fish. I use cod loin
A few ounces of breadcrumbs
A little seasoned flour
1 or 2 beaten eggs depending on how many fish fingers you are making.
Oil to fry
Dry the fish and cut into fingers.
Lightly cover them in the seasoned flour and shake off the excess.
Dip them in the beaten egg and then the bread crumbs.
Dip them in the egg again and then the breadcrumbs again.
Fry in hot oil until golden, a few minutes.
See, simple.
Now wonder why you bother buying the frozen ones.
Serve with chips mushy peas and grilled/fried tomatoes

What an easy and quick recipe. I love fish sticks/fingers. I think what I enjoy better is the tartar sauce. Love that mayo!!

Rhylesgranny actually no. I live by the sea in Southern Italy so seabass is actually less expensive than cod here! I go down to the harbour early in the morning and get the best of the fresh catch! I will be putting some nice fish recipes from mother in laws ancient cookbook soon so be sure to check in! xx

lol I came to work for a year in Milan and ended up meeting a guy from the South, started dating and stayed. We moved back to the South about 7 years ago now after 7 in Milan. I now wake up in the morning to the smell of lemons from the lemon groves on the Amalfi Coast. But there are times when I'd love to wake up to a big fry up, decent tea and decent spuds lol I'm never happy! xx
You always miss things from home but.........waking up to the smell of lemons and a handsome Italian now if I was young again I'd go with that. You can always make your own soda and potato bread for the fry up. I have them all under 'Irish Bread' x
